Freeze Dried Acai
A method of conserving foods by drying and freezing. The product is quickly dried and frozen in a manner which causes the sublimation of the formation of ice crystals.
The product is the utilization of acai pulp and powder obtained by freeze-drying technology.
This process, which consists of drying by freezing, inhibits the loss of properties of the fruit in relation to the traditional process of drying by heat. This assures the best properties of the acai.
Freeze drying is used to produce Instant Coffee and by the pharmaceutical industry.
Freeze drying is different from drying, whereby the most common method is to heat the food until all water evaporates. With freeze drying, the product is exposed to low temperatures and pressure and water changes directly from the solid state to a gas.
Freeze drying causes the food to lose much less of its properties than when the drying occurs by exposure to heat.
The advantage of freeze drying is that, in this process, there is very little nutrient loss.
