The appearance and fragrance of our vanilla is unequalled due to the beneficial process based in our special kilns and sun. It is then cured craft like, which make our product, retain its aroma, color and taste. At Gaya, we use the same method invented by our great grandfather, Domingo Gaia Tossi, which consists of placing the green vanilla pod in sacks and introducing it into an oven, inspired by the Italian model used in the 19th century to kill the silk worm, under a determined period and temperature. Once the vanilla pods have been cured, we proceed to their classification by size and tie them in bundles of 60 to 100 pieces which are then packed in wax paper and boxed.
